Adobo
2 lbs pork and / or chicken, cut into pieces
1 head garlic, pounded
4 teaspoons soy sauce
1/2 cup vinegar
1 teaspoon black pepper, ground
1 tablespoon whole peppercorn
2 bay leaf
2 cups water
1 tablespoon lard (or butter)
Place pork or chicken (or equal portions of both) in saucepan. Add garlic, soy sauce, vinegar, ground pepper, peppercorn, bayleaf, and water. Cover and cook slowly until meat is tender and most of the broth is evaporated and only 1/4 cup remains.
Drain, separate the pieces of garlic from the pork and fry in lard (or butter) until brown. Add pieces of meat and fry until brown. Add broth and let simmer about 5 minutes. Serve hot with steamed jasmine rice.
